The Tasty Secret of Minangkabau Culinary, Check It Out


When we heard Minangkabau, the first things crossing in our mind are rendang, dendeng batokok, Jam Gadang, Istano Pagaruyuang, and more. Most people will think about the culinary, right? That is why we can find Rumah Makan (Restaurant) Padang everywhere in Indonesia even almost every country in the world.

One of the culinary that Minangkabau people pride is gulai or curry. The Minangkabau curry gives you the different taste from the curry of other districts. For the curry lovers, Gulai Tambusu can be the right recommendation of spoiling your tongue. Or… you can make it by your self.

Tambusu is made of cow intestines that filled with the mixture of tofu, egg white, and the certain ingredients. Serving it with the curry, make gulai tambusu is tastier. Curious? Let’s check the receipt out here.

The Ingredients

  • 1 kg of cow intestines
  • 5 items of chicken eggs
  • 5 items of duck eggs
  • 1 liters of the thick coconut milk from 2 items of coconuts

The Ingredients of Fillings

  • 2 items of red onions
  • 2 cloves of garlic
  • 1 tablespoon of hazelnut milled
  • 1 teaspoon of red chilis milled
  • Salt

The Ingredients of The Curry

  • 10 of red chili
  • 6 items of red onion
  • 6 cloves of garlic
  • 4 items of hazelnut
  • 3 sheets of bay leaf
  • 2 teaspoon of tamarind
  • 3 sheets of lime leaf
  • A segment of galangal
  • A segment of ginger
  • A sheet of turmeric leaf
  • Salt

How To Make Gulai Tambusu Step by Step

First, wash the intestines until you are sure that is clean, inside and outside. Try not to make it break. Throw the fatty and tie one of the ends of the intestines.

Second, stir all the eggs, mix the coconut milk and the fillings ingredients into it. Then, fill the intestines with the mixture of the filling ingredients. Do not let it over full and tie another end of the intestines, it will be like a sausage.

After that, boil some water, then put the full intestines into the boiled water and boil it until cook. The next step, boil the coconut milk until it is oily and stir-fry the ingredients of the curry but the leaves. Then, add the leaves to the stir-fry and pour the thick coconut milk. Cook it with the small heat until it thicker.

The last step put the cut boiled tambusu into the curry, cook it until it is cooked. Turn off the heat and serve it.
